Vegan Coconut Cookies

Yield:  48 cookies

Ingredients

1 pound  Vegan margarine
¾ pounds  Brown sugar
2 ½ cups  White sugar
1 ½ tablespoons  Coconut Extract
½ teaspoon  Salt
2 ½ tablespoons  Egg replacer mixed with 10 tablespoons warm water
2 ½ cups  White whole wheat flour
3 ¾ cups  All purpose flour
2 ½ teaspoons  Baking soda
2 cups  Shredded coconut

Steps

1. Combine 10 tablespoons warm water in a small bowl with 2 ½ tablespoons of ENERG egg replacer & mix well. 
2. Allow to stand for at least 1 minute to thicken to the consistency of eggs.
3. Cream margarine with sugars until smooth and fluffy. 
4. Add egg replacer and coconut extract, mix until incorporated.
5. Combine dry ingredients in a bowl, add to creamed mixture and mix just until combined. 
6. Drop by rounded tablespoon onto ungreased baking sheets
7. Bake at 350 for 9 – 12 minutes
8. Let stand for 2 minutes; remove to wire racks to cool completely

Drizzle with coconut extract icing…
