Honolulu Tofu

Yield: 12 – 5 oz. portions

Ingredients

For Sauce

½ cup  + 2 tsp.  Ketchup
¾ cup + 1 Tbsp.  Sugar
¾ cup + 1 Tbsp.  Cold Water
2 Tbsp. + ½ tsp.  Tamari
2 Tbsp. + ½ tsp.  Cornstarch
2 Tbsp. + ½ tsp.  Water
½ cup + 1 Tbsp.  Vinegar

 For Tofu

1 lb.  Extra Firm Tofu
8 ½ oz.  Spanish Onions
5 oz.  Green Peppers
2 oz.  Red Peppers
1 cup + 1 Tbsp.  Pineapple Tidbits

Steps

  1. Combine all sauce ingredients except water and cornstarch. Bring to a boil.
  2. Combine cold water and cornstarch then add to sauce to thicken. Cook sauce for 5 -10 minutes.
  3. Deep fry tofu @ 350F until golden brown. Drain and set aside.
  4. In small amount of oil, sauté peppers and onions. Just before cooked, add in the pineapple.
  5. Add tofu and sautéed vegetables together. Toss in sauce and serve.
