Bowdoin Blueberry Muffins

Yield 1 dozen


3.5 Cups AP Flour
1 Cup Granulated Sugar
1.5 Tablespoons Baking Powder
1 Teaspoon Salt

Combine all dry ingredients.

2 each Fresh Eggs
3/4 Cup Canola Oil
1.5 Cup Milk
1 Teaspoon grated orange zest (optional)

Combine wet ingredients, mix well, and add to dry. Mix by hand, the batter will be lumpy. Do not over mix.....

2 cups Maine Blueberries


1. Fold in Fruit being careful not to over mix.
2. Fill greased or lined muffin tins about 2/3 full.
3. Sprinkle tops with a little sugar.
4. Bake @ 375 F for 25-30 minutes.
