Our recent hiring of Jonathan Holmes as the new Sourcing and Menu Manager brought with it the opportunity to spice up our Dining Service management staff.  Jonathan is a 2001 graduate of the culinary program at Johnson and Wales University and has led a stylishly itinerant life.  After a brief stint working for a high-end catering company on Long Island, Jonathan took to the water and spent the next 10 years managing foodservice operations on various sailing vessels, including the Hudson River Sloop, Clearwater.  This was followed by a stint as chef of a not-for-profit leadership development program on an island in the middle of Casco Bay.  Settling down in Brunswick with his new wife, Naomi, Jonathan built a successful food truck business on the Brunswick mall called Lola's Taqueria which featured a Mexican inspired menu of freshly made burritos and tacos accompanied by artisanal salsas.

At last Thursday night's dinner to celebrate Halloween (el dia de las muertas), Jonathan worked with our Thorne Hall chefs to prepare deliciously fragrant Carne Asada which he served with a selection of his house-made salsa including a roasted salsa, salsa verde, and XX salsa, plus sliced radishes, pickled onions and fresh limes.  The students thoroughly enjoyed meeting and talking to Jonathan and Naomi and appreciating the authentic qualities of his salsas crudas.
